The hamburger dreams of Panama’s youngest chef

slabon curva_optAt 22, Alejandro Mazzei is known as Panama’s youngest chef. He grew up watching his mother and grandmother in the kitchen. He says: “They never took cooking classes, but with just a few ingredients they would make the most amazing dishes.” Alejandro knew he had a passion for cooking in his blood and decided to enroll in the Panama International Hotel School.

A year ago, Alejandro was thinking of getting on a plane to continue his studies in Italy, when opportunity knocked. A foreigner wanted to open a restaurant in Panama. He would be the chef. Plans fell through, but Alejandro kept the dream going and asked his family to support him. Building the restaurant was quite a challenge, he says, it took almost a whole year. Slabón Café Bistro opened July of this year.

“I believe in my dreams, and one night I dreamt that I was selling the best burgers and they were a hit,” he says, “So I decided that the restaurant would feature a modern style of American diner.” The menu has a wide selection of hamburgers. Most diners order the Mushroom Swiss Burger, but the young chef favors the Habanera Burger with ground meat, chimichurri, fried egg and French fries in the burger!

Slabón Café Bistro is located in Obarrio, Calle 50 between Abel Bravo Street and Samuel Lewis Avenue in Plaza Strip 58.
