Brio Brasserie new menu. The partnership between Chef Germán Ghelfi and Chef Joseph Cerny is the key behind the new menu of the Brio Brasserie restaurant at the Waldorf Astoria Hotel Panama which combines elements of French-American cuisine with a Panamanian touch.

According to the hotel, the new menu invites guests to “enjoy exclusive preparations, dishes carefully developed that create a sublime experience on the palate, from hot or cold appetizers to innovative main courses”.

The most outstanding dish offered on this new menu is pork ribs, cooked at a low temperature, marinated and simmered in craft beer and accompanied by potatoes and creamy sweet yams.

The desserts created by the Pastry Chef, Nicolas Ithurralde, also present something new and irresistable. One of the highlights is the Panamanian Pineapple Surprise, a sphere of white chocolate with yellow notes, coconut mousse and pineapple sorbet, topped with juicy caramelized pineapple cubes.
