Signatures and its Singing Chef. Anibal Chiari is not only a great singer and musician, but also a talented chef. He is the owner of Signature’s Grill and Bistro, located in Plaza Clayton PH, in Clayton. The restaurant has a varied menu reflecting the character of the owner, with tex-mex options such as quesadillas, sopes and fajitas or delicate Asian offerings such as beef or seafood casseroles or nikkei tuna.

This chef enjoys experimenting with food from around the world such as the “caucau de mariscos” of Peru and the Italian “risotto frutti di mare”. His special lunch menu is full of surprises and changes weekly. Loyal customers, who are in the know receive a newsletter, in which they can get a sneak preview of what is the special of the day. “When it is Asian ribs’ day people call in advance or prior lunchtime to reserve their own plate before it is a sold-out item”, said Chiari with a smile.

The signature burgers and salad are exquisite, just as the rest of his food which includes deep fried ice cream with a reduction of carmenere red wine sauce and other sweet creations capable of satisfying the most demanding palate.

On special nights you can order a dozen wings (Asian, BBQ or buffalo) and you get two Balboa beers free of cost. Wednesday is mojito night. When you order a main dish there is a free mojito, the following ones cost $1 each. Ladies’ night is on Thursday, and with a main dish comes two glasses of sangria, which cost $3.50 after the first one.

The best night is Friday when there is open mike. Happy hours is from 4:00p.m to 7:00 p.m. and there is live music courtesy of Joanstelle. Chiari performs after the kitchen is closed. Everybody gets involved in fun when he conjures instruments from the bar and passes them among the audience so they get involved too.
